On tile we form pan flashing and use lead or malleable aluminum at the courses so the tile can lap the metal properly. On brick we cut into the mortar joint instead of face-sealing the surface, then repoint what we cut once the metal is in place. Both take longer than caulking and both are the reason the detail is still dry in ten years.
